Sour Cream Apple Pie

Not sure where I got this one, but it’s some mighty good pie.

Ingredients:

2 pie crusts

filling:                

2/3 cup sour cream
1/3 cup sugar             
1 egg, lightly beaten
¼ tsp. salt                 
1 tsp vanilla
3 TBSP flour              
1 can apple pie filling

topping:
5 TBSP brown sugar      
5 TBSP sugar
3 tsp cinnamon

Preheat oven to 350º.  Whisk all filling ingredients except the apple pie filling.  Add the apple pie filling, and then spoon into bottom crust in pie pan.  Combine topping ingredients and sprinkle over filling then cover with top crust. 

(I usually cut a small design in the top crust, but you can also cut the top crust into strips and weave a lattice pattern.  Or you can just lay the top crust and not worry about being fancy ‘cuz it’s still gonna taste just as good.)

Bake in center of oven for 55-60 minutes.  (I usually put the pie on a large cookie sheet so if the pie bubbles over it doesn’t mess up my oven.)
